“Our dinner, our entoexperience, is designed as a slow approach to the idea of bugs in the dish. Giulia (Maffei) and I accompany our guests as they slowly, slowly discover bugs, so at the beginning we don’t serve them whole,” the food designer explains. The menu included welcome canapes with tofu cream sprinkled with crushed crickets and waxworm powder; potato focaccia bread with pan fried crushed crickets; pesto pasta with pan fried waxworms cut into pieces; oven-cooked egg flanked by marinated grasshopper and coffee semi-frozen dessert with whole waxworm larvae.
