Critter Crumble Sundae

INGREDIENTS

½ cup RED TERMITES (EntomoFood AFRICA)

1 tbsp COCONUT OIL

1 tbsp MAPLE SYRUP

¼ cup BROWN SUGAR

½ tbsp GINGER POWDER

½ tbsp CINNAMON

2 APPLES

3 tbsps OLIVE OIL

1 tbsp FIVE SPICE POWDER

1 tbsp LAVENDER FLOWERS

½ tsp SMOKED SALT

1 pint ICE CREAM

WHIPPED CREAM

DIRECTIONS

  1. Preheat oven to 350°F.

  2. Toss RED TERMITES in COCONUT OIL, MAPLE SYRUP, 1 tbsp BROWN SUGAR, GINGER and CINNAMON.  Spread out on a silicone baking mat-lined pan and bake for 5 minutes. Remove from oven and transfer TERMITES to a plate, gently separate with a fork and let cool.

  3. Slice APPLES ¼ inch thick horizontally and lay slices on mat-lined pan.  Drizzle OLIVE OIL on APPLES. Sprinkle on remaining BROWN SUGAR, FIVE SPICE POWDER, LAVENDER and SMOKED SALT.  Place in oven to bake for 10 minutes. Remove from oven.

  4. To assemble sundae, plate ROASTED APPLES then add a scoop of ICE CREAM and finish with WHIPPED CREAM and CANDIED TERMITES.
