In Mexico, each of the 32 states has a different cuisine and its own insects that go into them. Chef Mario Hernandez of The Black Ant, located on the Lower East Side of Manhattan, is sharing elevated versions of those dishes by pulling from the flavors his grandmother shared with him as a child.
