Gluten-Free & Dairy-Free Chocolate Orange Cricket Cake
Cake Ingredients:
¼ cup vegetable oil
1 cup chocolate almond milk*
1 tbsp white vinegar
1 tsp high quality orange extract
Zest of 1 large Cara Cara orange
8 tbsp pure maple syrup
1 tsp vanilla extract
Pinch of sea salt
1 cup almond flour
¼ cup cricket powder
1 ¼ cup Gluten-Free Flour
2 heaping tsp Gluten-Free baking powder
¼ tsp baking soda
3 tbsp Almondena 100% pure, extra bold cocoa powder (or any high quality bold cocoa powder)*
*can add more milk if needed and/or more cocoa powder if you want it more chocolatey
Icing Ingredients:
1 large sweet potato
3-4 tbsps cocoa powder (same kind as above)*varied based on how creamy you like your icing
1 tsp vanilla extract
4 tbsp pure maple syrup
1 tsp melted coconut oil
Squeezed pulp & juice from both ends of the cut up orange
Ingredients For Decorating:
4 tbsp (or more if you like) of high quality, no sugar added orange marmalade
Cara Cara orange slices (from the orange you previously zested and cut the ends off of)
Directions:
Preheat oven to 350 degrees Fahrenheit.
Add the first 8 cake ingredients to a large bowl and stir. Add the sifted flours and remainder of ingredients. Stir to combine, but do not overmix. Add more milk/cocoa if desired or necessary. Batter should be fluffy and soft, but not runny or thick.
Coat 2 x 7” round baking pans with coconut oil spray. Divide cake mixture into both pans and bake for 25-35 mins, depending upon oven and altitude of location you’re baking. Watch the cake; it is done when you can put a toothpick in the centre and it comes out clean.
While cakes cool, make the icing. Peel, cut up potato, and boil until very soft.
Mash the potato and add the remaining icing ingredients. Mix furiously until icing is smooth in appearance. Set in fridge to cool.
When cake and icing are cool, spread the marmalade on to the first layer of cake. Spread some of the icing on top of that. Place the second cake layer on. Finish spreading the icing on the top and sides of the cake. Add sliced oranges for decoration (or just for a photo and then immediately remove them to eat, because they’re delicious).
