Cherry Tomato, Mascarpone, and Grasshopper Sauce

Packed full of fresh basil leaves, this creamy sauce is wonderful poured over fresh pasta and topped with cheese.

Ingredients

  • 2 tbsp olive oil
  • 15 grasshoppers
  • 2 garlic cloves
  • 7 oz cherry tomatoes
  • 7 oz canned chopped tomatoes
  • 2/3 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup basil
  • salt and pepper to taste

Instructions

  1. In a large frying pan, heat the olive oil over a high heat. Once hot, add the grasshoppers, garlic and fresh tomatoes, canned tomatoes and tomato puree and fry for about 5 min until the garlic has browned and the tomatoes are sizzling.

  2. Next, add this mixture to a food processor with the rest of the ingredients and whizz until smooth.

  3. Pour the sauce into a pan over a low heat and bring back to a simmer before serving.
