Our guest today is 3-time Ninja Warrior contestant Eric Middleton. Eric is an entomologist at the University of Minnesota who not only love studying bugs, but eating them, also. Locust Quinoa Bowl

INGREDIENTS

1 cup QUINOA

2 cups WATER

2 cups RED KALE (lightly chopped)

1 tbsp BUTTER

½ cup EntoVida LOCUSTS

1 tbsp TURMERIC

2 EGGS

½ cup COCONUT-based YOGURT

1 tbsp THYME LEAVES

DIRECTIONS

Bring QUINOA and WATER to a boil in medium saucepan then lower to simmer and cover to cook for 15 minutes or until all water is absorbed and quinoa is light and fluffy.

Blanch RED KALE in another saucepan with simmering water for 1 minute. Transfer to plate and let cool.

Melt BUTTER in a pan over high heat and saute LOCUSTS for 2 minutes until BUTTER is absorbed.

Dissolve TURMERIC in BLANCHING LIQUID then poach EGGS.

Add QUINOA to a bowl and top with KALE, LOCUSTS, COCONUT-based YOGURT, POACHED EGG and THYME garnish.
